This santoku from Wüsthof with its traditional Asian-style shape, has hollows along the edge to prevent ingredients from sticking. Perfect for slicing fish and meat, chopping herbs or dicing vegetables.
The knife possesses the integral strength of a fully forged blade hardened to 58 Rockwell through a 54-step manufacturing process consisting of a combination of laser-precise machinery and world-class artisan expertise.
Wüsthof's Asian-style blades exhibit a 10° edge angle per side, finished off with a comfortable ergonomic handle made from POM - a durable material with tight molecular structure to resist fading, discolouration and build-up of insanitary material.
The full bolster (the junction between handle and blade) protects the hand from the sharp blade and balances the weight of the knife.
